That's the same one I've got saved in my Amazon "wish list." Maybe next year...

I've got a smaller Fagor Duo pressure cooker that's great for cooking, but it's a bit small for pressure canning.

I just got mine last week. I'm going to try some things the weekend after Christmas, and will post my results.

I also bought a regular pot for boiling, a month ago. So far I've only canned apples. It's been about a month, I'm thinking of opening one of the smaller jars from my canning sessions to test them out.

I broke out the All American pressure cooker/canner I bought over the summer to can soup I made from the leftover turkey carcass. Everything else I canned this summer only required a water bath.

We can in the summer and had soup last night from our cans. I advise you get some books on the subject, you need to be careful with low acid foods like greens.

Some things are better dried than canned. We just had dried oyster mushrooms in the soup for the first time last night, almost as good as fresh! I'll never can mushrooms again.

I don't grow & dry my own mushrooms, but agree with you that dried shrooms are most excellent in soups or in a pressure cooker risotto. I get most of my dried shrooms from Pistol River Mushroom (but also get dried shiitake from the local Chinese store in 2-5# bags). Pistol River's dried Porcini mushrooms are delicious.

Garage sales, probably.

If you want a new one, shipping is always $$$ on the larger cookers. Amazon seems to offer reasonable prices & free shipping on may pressure cookers.

TN...Andy posted this link awhile back. The difference between these and other brands is that the All-Americans don't have a rubber gasket that will eventually have to be replaced.

Anyway, the price here for the 30 quart was cheaper than what I paid, and I got mine at Frugal Squirrel. And my calculations were done figuring in shipping. Anyway, it's an option.

Nice find! Amazon also has the 25-quart All-American at $209. But for an extra $20, I'd go with the 30 quart...

The first time I canned, it was green beans. I spent hours picking, cleaning, chopping and packing my green beans in a presto canner. I had an experienced canner there with me to do the final steps of putting the beans in the jar, jars in the canner. I canned about 20 to 30 jars. NOT one of those jars sealed. I was so mad! After that, I went to the local Amish Community and asked what they used. It was the All American Canner. I bought one from the Amish Store. that was 12 years ago. I have never had to buy a part for it or replace anything. One summer, I canned over 500 jars of fruit and veggies. When we butcher a beef or hog, they get canned too. With the 3 safety items on this canner, I feel more secure. No chance of your lid blowing off. And the fact that the Amish would use this canner on a wood cook stove confirmed my choice.
I agree with the other poster about getting the Ball canning book. Read it before you can anything. If needed, do a dry run, and can a jar full of water.

Beef Stew Recipe
2 roast (8 cups)
potatoes ( 7 cups)
carrots ( 7 cups)
frozen peas
Frozen corn
barley (3/4 cup)
celery salt to taste
mustard
Broth

Boil the barley till soft.

Cut the fat off the roast, and cube in 1 inch squares. Put the cubes in a skillet and rub the mustard on it. Sprinkle some celery salt on it, a few onion flakes, redmons real salt. Lightly brown it. Put it in a pot on simmer until all meat is browned in the skillet.

Peel and cut the carrots and potatoes.

I put 1/2 teaspoon canning salt in the jar and 1/4 to 1/2 teaspoon of pepper in each quart jar.

Put 1 cup of meat, potatoes, carrots, 1/3 cup peas, corn and barley in a bowl. I mix it up a little so its mixed in the jar. Poor the mixture in your jar.

I always put a ladle full of broth or water in the bottom of the jar before I put the meat and veggies in. Finish filling with juice, 1 inch head space. De-bubble, wipe tops , lids and rings.

Pressure cook quarts for 90 min.

You can boil your carrots and potatoes a little before you jar them. I do sometimes, but I find that by the time that they pressure cook, then your boil them once they are opened it makes them too mushy.
